Chicken Alfredo Recipe

Ingredients:

  • 2 tbsp extra virgin olive oil
  • 2 boneless skinless chicken breasts
  • Kosher salt
  • 2 tablespoon butter
  • Freshly ground black pepper
  • 1/2 cup whole milk
  • 2 cloves garlic, minced
  • 8 oz. fettuccini
  • 2cups heavy cream
  • ½ cups freshly grated Parmesan
  • Freshly chopped parsley, for garnish

Method:

1- Heat the olive oil in a pan and put the chicken thighs sprinkle salt and black pepper fry for 10 minutes, then change the side and repeat the process until it turns golden brown. Place on a plate then wraps in foil until it is cool enough to cut into pieces.

2- Add salt into the water when it starts boiling add pasta and cook for 1 minute until it gets soft, but try to avoid over-soft. Just before draining the pasta, reserve about ½ cup of the magical pasta water.

3- Add the butter and minced garlic to a pan and give it a stir for at least 2 minutes until it turns golden.

4- Then add heavy cream in it and give it a mix on medium flame and wait for the cream to simmer.

5- Once the cream starts simmering add the grated parmesan cheese to the pan and some milk. Continue to stir until it gets melted and mix into the cream. For a few minutes, let the sauce simmer.

6- Add pepper and salt to the sauce.

7- Once the pasta is combined with the creamy sauce, add it to the sauce and toss it to combine. In case the sauce becomes too thick, toss some of the reserved pasta water with the sauce and combine. This gives the dish a great consistency.

8- Now season this pasta with fried chicken breast pieces which are cut into slices and add some freshly chopped parsley on top for the greenish look and seasoned with parmesan cheese.

9- If you like crunch you can toast some panko bread crumbs in a pan and garnish your pasta.

You don’t need to worry if the pasta seems to have too much sauce. When you will combine everything, the sauce will begin to adhere to the pasta and thicken right away.
